Despite Difficult Times, Renowned Restaurant Owner Opens New Venue in Fahle Quarter
Estonian renowned restaurant owner Joonas Koppel is opening a new restaurant with Mati Luht in the Fahle living and business quarter this autumn, and has rented 500 square meters there spread across two floors. During the summer season, an outdoor terrace will be added to the restaurant area.
Despite difficult times in the restaurant landscape and a reduced number of tourists, Joonas Koppel believes there is always room for a good restaurant. "People are willing to travel from across Estonia in search of culinary experiences and come to new exciting places. The exciting mix of restaurants in the Fahle area supports food enthusiasts in coming here," said Koppel.
The restaurant is rather in the higher price range and aimed at people who come for dinner, business lunch, or organize a private event at the restaurant. Joonas Koppel, one of the restaurant's founders, takes on the role of head chef and promises to bring flavors created from a combination of different countries' cuisines to clients. The restaurant is planned to open in early September.
Koppel compares the restaurant's style to a Scandinavian who moved to Asia. "The menu brings together Scandinavian pure flavors, French sophistication, Asian spices, and my technical touches. We will offer 14-16 course menus, tasting menus with a matching drink selection, and a three-course business lunch," said Koppel.
Although the restaurant's name and final concept are still being finalized, some elements are already known. Upon entering the restaurant, visitors will be greeted with a view of the open kitchen located on the first floor, which will offer visitors spectacular dining experiences. In front of the kitchen there will be a table where up to 15 people can sit in theater-style viewing the kitchen. In the first floor dining area, there will be 2 larger round tables with a revolving base in the center and privacy-creating sofa booths. The mezzanine floor offers the possibility of complete privacy. The flexible interior design and spacious area allow the second floor to host private events for up to 60 people, conferences, and meetings without having to close the entire restaurant. From the mezzanine floor, there is a nice view down to the dining room and out to the garden.
The creators of the new restaurant, Joonas Koppel and Mati Luht, own JAHH Catering, Estonia's fourth largest catering company. Currently, dishes prepared under Jaanus Koppel's direction can be enjoyed at the Michelin-recommended restaurant Mere 38 in Võsu and Restaurant 38 in Tallinn's Old Town. Koppel has also managed restaurants such as Puri, Paju Villa, and others.
